Regynald Washington: Hojeij Branded Foods wins 2016 GRACE Distinguished Service Award

“The restaurant industry is most rewarding when you are delivering hospitality,” says Regynald G. Washington, CEO of Hojeij Branded Foods, the largest restaurant provider of food and beverage at Hartsfield-Jackson Atlanta International Airport. He considers the keys to success to be “wowing the guest and developing, inspiring, motivating and educating your employees and management leaders to become professionals in this industry.” Inside the world’s most traveled airport, Hojeji Branded Foods operates 20 restaurants representing 20 different brands. Across the U.S., the Atlanta-based company operates a total of 73 restaurants representing more than 45 popular and widely recognized brands in 13 of the nation’s top 20 airports. The company employs more than 700 food and beverage employees in Atlanta and spends over $13 million each year with local food and beverage suppliers. To build its restaurants in the Atlanta airport, Hojeji’s capital expenditures exceeded $17.5 million, helping fuel the state’s economy. Washington has been involved with the GRA since its inauguration. He was the elected president of the restaurant segment and went on to represent the state of Georgia as a director on the National Restaurant Association Board; he went on to serve as Chairman of the Board. Washington is a long-term, forward thinker who cares about the future of the industry. He has served on Georgia State University’s Cecil B. Day Hospitality Board for 15 years, promoting and working with education for our industry. In 2015, he gave a $1-million endowment to the Cecil B. Chaplin alumnus helps rebuild homes and communities in Haiti

Frank Speranza (right), works hand-in-hand with the people of Haiti and members of The Foundation For Peace to help rebuild a community devasted by Hurricane Matthew. Last Fall, Chaplin alumnus Frank Speranza ‘81, returned from his most recent trip to Haiti, where he worked with The Foundation For Peace to help rebuild a community devastated by Hurricane Matthew. His first stop after landing in New York, NY was the annual Waldorf-Astoria Distinguished Alumni Party. The two worlds stood in stark contrast to one another. “[In Haiti] we were working with a community around a school where water came down from the mountains and carved a canyon into the street about six to eight feet deep,” he said. “The water came into people’s homes, destroyed buildings, washed crops away, washed livestock away - they literally lost everything that allowed them to be self-sufficient. Speranza first became involved with the foundation while serving as the Vice President of Operations for Interstate Hotels. The hotel industry is often well-positioned to aid these kinds of relief efforts because of their access to basic hygiene products like soap and toothpaste, as well as clean sheets and linens. Initially, Speranza helped supply hygiene kits through the hotels for on-site medical clinics in Haiti. Eleven years ago, he traveled there for the first time with his son. The experience made an impact on him, and he knew he wanted to become more involved. Carlos Alcantara ’16 Named Business Development Specialist of the Year

Chaplin School alumnus Carlos Alcantara '16 was recently presented with the award for the Royal Caribbean 2016 North East Business Development Specialist of the Year. Alcantara began working with Royal Caribbean in 2013 as a Bilingual Cruise Sales & Service Representative and moved into his current role as a Business Development Specialist in November of 2014.

Carlton Russell ’89 named President of the BHTA

Former president of the Bahamas Hotel and Tourism Association, Stuart Bowe (left), and incoming president, Carlton Russell '89. Chaplin School alumnus Carlton Russell '89 has taken over the role of President for the Bahamas Hotel and Tourism Association. Russell has been involved with the BHTA since becoming a Trustee for the Board of Directors in January of 2011, and has also served as Vice President of the organization since November of 2011. Russell has also worked as the Vice President of Resort and F&B Operations at The Cove & Reef at Atlantis, Paradise Island since 2013.

FIU Hospitality Alumni Talk: Alex Kuk

Alex Kuk B.S. '04, M.S. '08 recently discussed the challenges and opportunities of opening a new restaurant with hospitality management students at the Chaplin School. While sharing his experience with construction, funding, marketing, and human resources needs, he emphasized the importance of identifying a clear vision of the concept from the beginning, and the long-term benefits of staying true to that vision. He comes from a family of restaurateurs and co-owns Temple Street Eatery near Downtown Ft. Lauderdale, which has quickly become a favorite spot by many in South Florida, serving unique Asian comfort food.

Hospitality Alumnus Gives Students Insight on Opening a Restaurant

Andreas Schreiner '00 came back to where it all started. The Chaplin School alumnus is the founding partner of the Pubbelly Restaurant Group. He spoke with hospitality students on September 14 as part of the School's first alumni talk of the semester. The restaurant and hotel expert not only offered a look back at his life, but gave students insight into what it takes to build a successful restaurant from the ground up. "Have a clear goal of what you want and start working at it now," he told students. "When opening a restaurant, you should know that you will be part of every little thing you can think of. I remember going from formulating budgets to building furniture all on the same day." Schreiner spoke about how the Chaplin School prepared him for where he is today. "Surprisingly, the classes I enjoyed the least are the ones that ended up helping me the most, like accounting," he said. "The real-world knowledge I got from my professors and fellow students gave me a well-rounded education and helped me become a better person. FIU gave me the skills I needed earlier on in life that would otherwise have taken me much longer to learn." Schreiner gave some tidbits into what can be expected from the Pubbelly brand in the future. "PB Steak in Downtown is coming soon and so is Pubbelly Sushi in the Dominican Republic," he said. "A licensing agreement has also recently been signed with Norwegian Cruise Line for a Pubbelly-style restaurant." To anyone interested in opening a restaurant, Schreiner recommends securing 20 percent more in funds than the initial budget allocates. "That way, you are prepared for any curveballs thrown," he said.
