Peer Mentoring Program Launches in Career Services

The J. Willard and Alice S. Marriott Foundation Career Development Program is pleased to announce the launch of a mentoring program to facilitate peer-to-peer exchanges. Upperclassmen will be paired with mentees to share their knowledge and experiences navigating through academia and the job search process. Alumni and Dean’s Advisory Council Members to Receive FIU Torch Awards

Chaplin school alumni Humberto "Burt" Cabañas '76 (left) and Ed Mugnani '91 (right) will both be recognized at the 14th Annual Torch Awards to be held on Saturday, March 28 at the Fontainebleau Miami Beach. The Torch Awards are presented to distinguished alumni and influential members of the community. The awards represent the highest honor conferred by FIU to a graduate. Another Great Year for the Festival and FIU Students

Nearly 1,300 students from FIU provided managerial and logistical support at the 2015 Food Network & Cooking Channel South Beach Wine & Food Festival presented by FOOD & WINE last weekend. “The Festival gives our students a unique opportunity to work alongside industry leaders, presenting them with invaluable hands-on experience and the perfect setting to network,” said Mike Hampton, dean of FIU’s Chaplin School of Hospitality & Tourism Management. “We, at FIU, are honored to work with the Festival Founder and Director Lee Schrager and Southern Wine & Spirits to develop and nurture the next generation of hospitality and tourism leaders.” Students working the Festival are involved in many aspects of event planning, logistics, and operations that will help to prepare them for future jobs in management. “Our students use this festival as an opportunity to showcase their talents and hone their critical thinking skills,” added Hampton. Two students in particular developed the winning formulas for two new products, which will be launched at the festival: Alex Bello, whose Buffalo Mac ‘N Cheesy Burger recipe won him Red Robin’s Golden Robin Contest, will join Red Robin at the Amstel Light Burger Bash presented by Schweid & Sons hosted by Rachael Ray at the Festival on Friday, Feb. 20, where he will have the opportunity to showcase his pub-inspired burger creation. The marketing senior beat out 151 entries to earn a $10,000 scholarship and the chance to be featured on the menu at participating Red Robin® restaurants nationwide. Eddie Zeng recently won the second annual Badia Spices student spice competition. Student Chosen as Programs Director for National Hospitality Organization

Yolanda Suarez was elected to be serve on the 2015 – 2016 National Board as the National Programs Director for the National Society of Minorities in Hospitality. She will be in charge of nationwide chapter awards, High School Outreach, Scholarships, National résumé booklet, NSMH Internship E-Fair, National Hospitality Week, and other NSMH national programs. She has been a member of NSMH since her freshman year at FIU. NSMH's national conference takes place once a year and offers hospitality students three days of professional development, access to recruiters from across the nation, and endless networking. This year’s conference took place in Pittsburgh, Pennsylvania from February 12 - 15. NSMH is recognized as the premier professional organization for developing exceptional minority student talent and leadership and is the largest student-run organization of its kind. NSMH is sponsored by and partners with some of the most well-respected companies in the Hospitality industry including ARAMARK, The Disney Company, Four Seasons Hotels & Resorts, Hilton Worldwide, Hyatt Hotels Corporation, Sodexo, MGM Resorts International, DARDEN, OTG Management, and many more. The conference ends with a hospitality career fair showcasing jobs across the nation. Suarez says NSMH has provided her with rich development opportunities that have helped shape her as a student, a professional, and a leader. "Serving on the NSMH National Board is not only an honor for myself, but FIU as well. There is only one other person on the National Board from the Southern states," Suarez said. "Being on the National Board makes me an advocate for this amazing organization and to set a national example of the quality young professionals that study at FIU." Hospitality Career Week Spring 2015 Recap

From January 26 - 29, over 200 hospitality students at the Chaplin School participated Hospitality Career Week, sponsored by Chipotle Mexican Grill. Twenty-four employers came on campus to impart interviewing advice to students and review their resumes and portfolios. Hospitality students had the opportunity to network with hospitality professionals in the industry and learned about career, and internship opportunities during Hospitality Day. FIU Hospitality New York Reception

Nearly 70 FIU-hospitality alumni joined Dean Hampton, Associate Dean Rocco Angelo and a select group of students for the annual New York reception, which takes place in conjunction with the International Hotel, Motel & Restaurant Show and The American Hotel & Lodging Association Fall Conference. The event took place at the Sofitel New York Hotel.

Chaplin Students Attend Young Presidents’ Organization Luncheon for the First Time

Professor’s Modified Procedure Streamlines Winemaking

Before harvesting, winemakers give their grape crops "checkups" to ensure that acid levels are just right for picking. Among the tests administered are titratable acidity (TA titration) and yeast assimilable nitrogen (YAN), which both give winemakers an idea of how successful fermentation will be. Both tests require time and two separate samples for analysis. Dr. Barry Gump, Harvey R. Chaplin Eminent Scholar’s Chair and professor of Beverage Management, has recently developed a modified procedure that combines both tests into one that uses a single sample of grape or juice. With implementation of Dr. Gump's new method, winemakers will experience significant savings in operational time because analysis happens only once. Students, Faculty Get Access to Trends in Shared Ownership Investments

The 16th Annual Shared Ownership Investment Conference (SOIC) welcomed more than 500 guests at the Fontainebleau Miami Beach on October 13 - 14, 2014. For the first time this year, the Chaplin School has been designated the Exclusive Educational Partner, providing a great opportunity for students and faculty to attend the conference. Dean Mike Hampton opened the two-day conference alongside Bryan Ten Broek, senior vice president of resort sales and marketing for Interval International. Dean Hampton also moderated the CEO's panel discussion, "View from the Top", an event that brought together four distinguished leaders in the hospitality industry who spoke from their unique perspectives about the challenges and opportunities in the shared ownership sector. The panelists were: Jonathan Fredricks, president of Welk Resorts, Craig M. Nash, chairman and CEO of Interval Leisure Group, Roberto Rotter, executive director of Plaza Hotels, and president of Forum de Operadores Hoteleiros do Brasil (FOHB), and Stephen P. Weisz, president and CEO of Marriott Vacations Worldwide Corporation. More than 15 hospitality management students volunteered to provide support and logistical assistance to the conference.
